Ingredients
2 pears
Olive Oil
Salt and pepper
- For the sauce
1 teaspoon (5ml) olive oil
1 fresh red chili pepper
2 cloves
1 cardamom seed
1/2 tablespoon (7,5ml) white miso
1/2 tablespoon (7,5ml) tahini
4 big mint leaves
Directions
- Preheat your oven to 180°C (356°F). Halve the pears and place them on a plate. Lightly coat the pears with olive oil and sprinkle with a pinch of salt.
- Place the pears in the oven for 20 minutes. Then, turn them over and bake for an additional 20 minutes.
- While the pears are cooking, prepare your spicy serving sauce. In a low-heat pan, add olive oil. Chop the chili pepper and add it to the pan along with the 2 cloves and the cardamom seed. Let the mixture brown on low heat for approximately 5 minutes, tilting the pan to “pool up” the oil.
- Transfer the mixture to a bowl and let it cool. Once cooled, add the tahini and miso, then whisk until well combined. Roll the mint leaves together, slice them thinly, and add them to your sauce.
- When your pears are ready, plate them nicely and add the sauce on top, with an optional lime slice. Enjoy alongside a fresh spinach salad, some vegetables or during a summer barbecue!
